Watermelon Caprese Salad

Yes, yes, we know – it sounds weird but trust us, Watermelon Caprese Salad is surprisingly light and refreshing! The sweetness of the watermelon really compliments the creaminess of the mozzarella. You can add arugula if you’d like but we decided to stick with basil.

Ingredients


Watermelon

Tomatoes

fresh Mozzarella

Basil, chopped

olive oil & balsamic vinegar  

salt & pepper

How to’s


Throw all the ingredients into  a bowl and mix! Easy!!! 

Asian Tofu Lettuce Cups

Craving some Asian flare but want to avoid the high-calorie, heavy-sauce dishes? These Asian Tofu Lettuce Cups are light, filling and less than 330 calories! The perfect meal to get into tip top bikini shape!

 

Ingredients


Lettuce Cups: - 1 block firm or extra-firm tofu, well pressed and cut into 1 inch cubes   

- 1/2 cup white mushrooms chopped

- 1 tsp minced garlic

- 1/4 cup shelled and cooked edamame

- 2 Boston lettuce leaves

- 2 Tbs sliced scallions

Sauce:              - 1/2 Tbsp hoisin sauce

- 1 tsp low-sodium soy sauce

- 1/2 tsp rice vinegar

Asian Slaw:      - 1/2 cup shredded cabbage

- 1/4 cup grated carrot

- 1 tsp olive oil

- 1/2 tsp rice vinegar

How to’s


In a nonstick skillet coated with cooking spray, saute the garlic, mushrooms and tofu until the mushrooms are tender. Add the edamame, scoop mix onto lettuce, top with scallion, Asian Slaw and drizzle with sauce. Wrap up and eat!

Arugula Asparagus Salad

One of my girlfriends made this salad for us one night and I have been hooked ever since. It’s so simple, but the flavors complement each other perfectly. I felt like I was eating at a restaurant – maybe part of that had to do with her making the food and the yummy glass of red wine on the side:)

Ingredients:


 

4 cups arugula

8 spears of asparagus

1 cup parmesan, shaved

1/2 c canellini beans

lemon juice to taste

1 tbsp olive oil

pepper to taste

 

How-To’s:


 

Blanche the asparagus and slice into 1 1/2 inch slices. Mix the arugula, asparagus, parmesan, canellini beans, olive oil and lemon. Top with pepper and enjoy.
